Fat is Flavor ! It is a principle I live by, therefore when you see dairy in any of my recipes, know that it is full fat butter, milk, buttermilk. You may certainly substitute your favorite, lower fat option, but why? The flavor sacrifice is too great for my taste.
Ingredients
2 Cups cornmeal
OR
1 Cup cornmeal
1 Cup all purpose flour
2 tsp. baking powder
1/2 tsp.baking soda
1/2 tsp.salt
1 Cup full fat buttermilk or yogurt
1 egg
3 TBL sugar or honey
3 TBL melted butter
Preheat oven to 350 F
Butter or oil an 8 or 9 inch cast iron skillet or square or round pan
Combine dry ingredients, whisk together.
Combine wet ingredients.
Stir wet into dry, stir just until mixed thoroughly together.
Spread in prepared skillet or pan.
Bake 20 -25 minutes until center is firm to touch and tooth pick comes out clean.
Serve hot, warm, room temp.
ADD butter! and maybe some honey.
