A little new dress for your salad.
Ingredients
- 1 fat shallot, minced (2 oz)
- Several cloves garlic (2 oz)
- 1 TBSP Lime peel, grated
- 8 oz red wine vinegar ( 4 oz red wine vinegar + 4 oz. Balsamic- the balsamic adds depth of flavor. Buy the best you are willing to afford)
- 1 tsp honey (or sugar)
- 1 oz salt
- 1/4 tsp black pepper
- At least 4 TBSP toasted, ground cumin
- 24 oz Extra Virgin Olive Oil (Yes, the type of Olive Oil makes a difference) Any Olive Oil will taste fine, it will just be different with different oil. Try them all!
Instructions
- Whisk all of the ingredients except the olive oil together, by hand OR with your handy processor or blender. Make sure your blender will hold this much.
- Slowly pour the olive oil into your vinegar mix: (either continue whisking by hand or on a slowish speed on blender)
- Too much? Cut the recipe in half. Just remember, you are eating 2 salads a day now and you do not want to run out of dressing.
