Lime and Cumin Salad dressing

A little new dress for your salad.

Ingredients
  1. 1 fat shallot, minced (2 oz)
  2. Several cloves garlic (2 oz)
  3. 1 TBSP Lime peel, grated
  4. 8 oz red wine vinegar ( 4 oz red wine vinegar + 4 oz. Balsamic- the balsamic adds depth of flavor. Buy the best you are willing to afford)
  5. 1 tsp honey (or sugar)
  6. 1 oz salt
  7. 1/4 tsp black pepper
  8. At least 4 TBSP toasted, ground cumin
  9. 24 oz Extra Virgin Olive Oil (Yes, the type of Olive Oil makes a difference) Any Olive Oil will taste fine, it will just be different with different oil. Try them all!
Instructions
  1. Whisk all of the ingredients except the olive oil together, by hand OR with your handy processor or blender. Make sure your blender will hold this much.
  2. Slowly pour the olive oil into your vinegar mix: (either continue whisking by hand or on a slowish speed on blender)
  3. Too much? Cut the recipe in half. Just remember, you are eating 2 salads a day now and you do not want to run out of dressing.
  4. Mangia!
