Squash Waffles

Pre Heat waffle iron

3/4 cup all purpose flour

1/2 cup cornmeal

2 Tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon fresh grated nutmeg

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon cloves

2 eggs room temp

1 1/4 cups buttermilk

1/2 cup cooked , mashed winter squash of your choice (or pumpkin)

2 Tablespoons melted butter

In a large bowl, combine dry ingredients.

In a small bowl, whisk together eggs, buttermilk, squash and melted butter. 

Stir into dry ingredients just until moistened.

Bake in pre heated waffle iron.

Slather with butter, add warm maple syrup.

Gluten Free option: Substitute Almond Flour for All Purpose flour . You could also make with 100% cornmeal. It makes a little crunchier waffle.

Add or subtract spices as your palate desires.
