EGG-O-NOMICS 2023

Maligned and disrespected for years alternating between years of cholesterol fear mongering and joyous years of the nutrient rich, low calorie, high protein sustenance.

Fried, scrambled, poached, soft boiled, basted, hard boiled, scotch eggs, 3 minute eggs, shirred, coddled, omelettes, shirred eggs, deviled, souffled, dippy eggs over easy, the possibilities are endless.

For dessert we have custard, chocolate mousse, angel cake, pound cake, zabaglione, banana cream pie and decadent flourless cupcakes that are all about the eggs!

It is impossible for something this diverse and delicious to be bad for us. An egg is just an egg. Some of us are indeed allergic to eggs, some of us just don’t like eggs. Yes, eggs have a considerable amount of cholesterol.

We need cholesterol! Cholesterol is an active participant in the production of Vitamin D, estrogen, progesterone, testosterone, and bile acids ( gross, but necessary for digesting fats). And most importantly, cholesterol is an essential component of every cell membrane in our body, wrapping cells in a little cholesterol bubble so the cells can slide along in our body.

If you do not have high cholesterol, if you are active and healthy, you may eat 1-3 eggs per day and feel good about yourself and your cholesterol. I know a weight lifter guy who eats 5 eggs for breakfast!! At 2.2 ounces, average, 65 – 70 calories, 6-7 grams of protein and just look at all these other nutrients! Enjoy your eggs for breakfast, lunch, dinner, dessert and snacks. When you can, buy eggs from your local farmer. They really are better and way more beautiful with their orangey, plump yolks and firm whites.
